"REDISCOVERING SAKE: Pairing with Seafood from Around the World” at the Culinary Institute of America in Napa

Guests learn about sake from Professor Bath
On Monday, September 30, the Consulate-General of Japan in San Francisco, JETRO San Francisco, and The Culinary Institute of America (CIA) hosted a guided tasting of sake and seafood entitled “Rediscovering Sake” at the CIA’s Copia campus in Napa. Restaurant owners, buyers, sommeliers, and writers came from across the Bay Area to learn more about how sake can pair with options outside of traditional Japanese cuisine.

After an introduction of sake essentials from CIA Professor Robert Bath, audience members followed a tasting course. During the course, moderator Tamiko Ishidate of Young’s Market Company conversed with panelists Mark Guillaudeu of Commis and Charlotte Randolph of Californios about ways to pair sake and different flavors of international seafood. They were later joined by Den Sake founder Yoshihiro Sake and Kenichi Tominaga of Mina Group & PUB to discuss recent sake trends and new pairing possibilities.

The day concluded with a tasting reception where guests mingled with producers, distributors, and experts to learn more about the industry and future of Japanese sake.
